Last night we tried a new recipe.
Sometimes these “new recipe nights” can be a flop when not all of us like whatever creation I have decided we should eat.
Thankfully, last night was NOT one of those nights – it was a HIT!
I discovered this new recipe on a new friends’ blog called “Whole New Mom”. On her site, Adrienne writes about her family’s journey through Asperger’s along with great tips and recipes related to Healthy Living. I think you’ll find some great things there, just as I have!
This new recipe is delicious – it is called Pakistani Kima (or Beef Curry).
2 – 3 Tbsp oil (I use coconut oil – where to buy coconut oil)
1 cup chopped onion
1 clove garlic, minced
1 lb ground beef (or other meat)
1 1/2 Tbsp curry powder
2 1/4 tsp sea salt
1/8 tsp pepper
1/8 tsp cinnamon
1/8 tsp ginger
1/8 tsp turmeric
2 1/2 – 3 cups tomatoes (about 1 1/2 14 oz cans)
3 potatoes, diced small
2 1/2 – 3 cups peas *We were out of peas and instead used corn and a little broccoli….substitute as you see fit
*Two notes – if you are serving this to kids or you do not like spicy meals, make sure you are using the MILD curry. Also, if your kids are like mine and don’t like “chunks” of tomatoes, simply puree the tomatoes before adding to the recipe!
I first melted the coconut oil and sauteed the onions and garlic until soft and translucent. Then I added the beef and cooked until browned well. Next came the spices, added all at once and stirred well, followed by the peas, tomatoes and potatoes. Finally, I brought to a gentle boil and then covered it, and turned it down to gently simmer for 25 minutes (until potatoes are done).
