Coconut Cream Concentrate Giveaway and a Blueberry Pudding Cake Recipe (gluten & dairy free)!
I just made this great Blueberry Pudding Cake with an ingredient I had NEVER used before. (Plus, I put this same ingredient in my coffee and I think it will save me money on latte’s from my local coffee shop!)
Have you ever heard of Coconut Cream Concentrate? It’s sometimes called Coconut Butter and it’s actually whole coconut meat in a concentrated form. There are many uses for it, including these:
You can mix 1 or 2 teaspoons of Coconut Cream Concentrate with water or juice to make a creamy coconut drink. Many people put it in their coffee as a non-dairy creamer. It is also an excellent ingredient for cooking and baking. Because of its low moisture content, it can be mixed right in the batter or dough of breads and pastries. It can also enhance soups, be blended with smoothies, or made into ice cream. Many people just eat it straight, or spread it on breads and crackers, because it is so delicious!
Tropical Traditions, a great company that offers coconut products and so much more, gave me the opportunity to try it out! AND they are giving one of them away to one of my readers!
You can enter below, but first I want to share 2 things (in addition to the fact that if you order by clicking on this link and have never ordered from Tropical Traditions in the past, you will receive a FREE BOOK on Virgin Coconut Oil, and I will receive a discount coupon for referring you):
#1 – The recipe
Servings: 1 9×9 pan
- 1 cup frozen blueberries —-> this is what I used
- 1 cup fresh blueberries & 1/4 cup juice of choice
- 1/2 cup coconut cream concentrate
- 1/2 cup full fat coconut milk*
- 1 large egg, at room temperature
- 2 tablespoons honey
- 1 teaspoon vanilla
- 1 cup almond or chestnut flour
- 2 teaspoons baking powder
- 1 teaspoon Himalayan pink salt
Here’s how mine turned out (I topped my piece with whipped cream). It was SO good:
#2 – Besides the fact that have hundreds of recipes on their site, they also have THE very best coconut oil. It is seriously my favorite (and I’ve tried lots of brands).
They are all about educating consumers about coconut oil and they have a nifty page that explains the differences between the coconut oils they offer – check it out HERE. My favorite is the Organic Gold Label Virgin Coconut Oil. I buy it a gallon at a time and it lasts for several months for our family of 6. (Note: be sure to watch the video on their main page too!)
One of my lucky readers will also be winning a Coconut Cream Concentrate! Enter to win below (and help spread the word by sharing this giveaway with friends!!!):
