Coconut Cream Concentrate Giveaway and a Blueberry Pudding Cake Recipe (gluten & dairy free)!

I just made this great Blueberry Pudding Cake with an ingredient I had NEVER used before. (Plus, I put this same ingredient in my coffee and I think it will save me money on latte’s from my local coffee shop!)

Have you ever heard of Coconut Cream Concentrate?  It’s sometimes called Coconut Butter and it’s actually whole coconut meat in a concentrated form. There are many uses for it, including these:

You can mix 1 or 2 teaspoons of Coconut Cream Concentrate with water or juice to make a creamy coconut drink. Many people put it in their coffee as a non-dairy creamer. It is also an excellent ingredient for cooking and baking. Because of its low moisture content, it can be mixed right in the batter or dough of breads and pastries. It can also enhance soups, be blended with smoothies, or made into ice cream. Many people just eat it straight, or spread it on breads and crackers, because it is so delicious!

Blueberry Pudding Cake

Servings: 1 9×9 pan

  • 1 cup frozen blueberries  —-> this is what I used
  • 1 cup fresh blueberries & 1/4 cup juice of choice
  • 1/2 cup coconut cream concentrate
  • 1/2 cup full fat coconut milk*
  • 1 large egg, at room temperature
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1 cup almond or chestnut flour
  • 2 teaspoons baking powder
  • 1 teaspoon Himalayan pink salt

Here’s how mine turned out (I topped my piece with whipped cream). It was SO good:

    Thanks for this! I am a total devotee of the TT coconut chips, and regularly buy the 1-kilo bags to satisfy my “crunch” cravings. But I’ve never tried the Gold Label Coconut Oil, and would love to get some someday.

    This recipe looks fabulous! I’ve been gluten free for a while, but have never tried chestnut flour. I’m going to have to now though! I’m sharing this recipe on fb and pinning right now. 🙂
