The Best Dip Ever: Fiesta Dip, Cowboy Caviar, You Name It.
This is seriously THE. BEST. DIP. EVER!!! I’ve changed it up a bit from the original to make it a bit more “real food” friendly.
1 can organic black beans, rinsed and drained (or equivalent of soaked, cooked beans)
1 can Mexicorn/Fiesta Corn, drained (I just thaw out some of my frozen corn from the summer to avoid any GMO corn)
2 firm avocados, diced
2 firm, organic tomatoes, diced
1 bunch of organic green onions, thinly sliced
red onion, to taste
*I sometimes add some cilantro, too
1/2 cup olive oil
1/4 cup vinegar (I used apple cider vinegar)
*Whisk dressing ingredients together and pour over veggies; mix gently. Serve with organic tortilla chips! Tastes best when it can all chill first in fridge for a while.
*NOTE: this dressing recipe makes a lot. I usually double other ingredients and then use this amount of dressing for a double recipe of the veggies.
