Meal Plan Monday – 3/14/16

I’ll be honest….

Sometimes I REALLY, really do not want to meal plan.

Especially on a Sunday night after I’ve been on-call for my RN job all weekend and am tired.

But, I’m going to do it anyway.

WHY, you ask?!

There are 2 reasons:

  1. If I don’t, I will be stressed every day, wasting time figuring out what to make for dinner, and then annoyed that I didn’t thaw something, soak something or start chopping something earlier, and
  2. I can’t post my Menu Plan Monday post.

Dinners for this week:

Monday: Minestrone Quinoa Soup (was on list last week but ended up doing leftovers that night)

Tuesday: Best Whole Chicken in a Crockpot, roasted veggies (by the way, this is the Crockpot I use and LOVE – it’s BIG!)

Wednesday: Melissa’s Stirfry

Thursday: Hash (potatoes plus whatever veggies need to get used up)

Friday: Paskistani Beef Kima

Saturday: Homemade Pizza

Sunday: Smoothies and popcorn, leftovers
