Meal Plan Monday – 3/7/16
It seems that Spring is just around the corner! The snow is melting here in west Michigan and temps in the 60’s are being forecasted!
Even so, at least one of the recipes below (the soup) still feels like a winter meal. Oh, well. I know spring veggies and fruits will soon be here and my meal plans will reflect that.
In the meantime, I hope you find a few new recipes below and that maybe my meal plan can help make your weeks’ dinners a bit easier! The Tandoori Chicken from last week was DELICIOUS! And if you missed a recent post, you’ll want to check out the Potato, Brussels Sprout and Sausage Soup.
Here’s what we are eating this week:
Monday: Spaghetti w/ homemade canned spaghetti sauce, steamed veggie
Tuesday: Salmon, Baked potatoes, veggie, salad
Wednesday: Harvest Minestrone with Quinoa and Kale
Thursday: Chicken, Spinach and Potato Hash, salad
Friday: Garden Meatloaf (will double as suggested for meatballs)
Saturday: Homemade pizza
Sunday: Leftovers and smoothies/popcorn
