Meal Plan Monday – 4/11/16

It’s been a few weeks since I’ve done my Meal Plan Monday…so it’s time to back into it. We just got back from spring break in Florida, where it was warm and I was lazy. That also means my eating was lazy, too! This has left me craving LOTS of fruits and veggies, so I will be trying to incorporate more of them this week!

(Thankfully, I also have my “salad-bar-in-a-capsule” to help me bridge that gap between those fruits/veggies I SHOULD be eating every day and what I actually eat.)


Here’s our meal plan for the week:

Monday: Baked salmon, baked potatoes, mixed veggies

Tuesday: Tacos, crockpot refried beans  *I use this homemade taco seasoning mix

Wednesday: Pasta with spaghetti sauce or pesto sauce (frozen from last summer’s crazy basil in my garden), veggies, salad from our Tower Garden

Thursday: Hmm, can’t decide, but it will be a soup from this page.

Friday: Weeknight Beef Bourguignon

Saturday: Homemade pizza

Sunday: Leftovers, smoothies, popcorn
