Monday Meal Plan & Recipe Share (with links to my weeks’ meals)

It’s Monday again! Below you’ll see the link-up details, but I wanted to share our meal plan for the week. (P.S.) If you need help planning your meals, check out my post on 30 Days of Dinner – my menu plan.

Here’s what we are eating for dinner at our house this week:

Monday: Spaghetti with Homemade Spaghetti sauce, side veggie (whatever is pick-able in the garden)

Tuesday: Salmon on the grill (I am careful to only buy WILD-caught salmon). We place salmon fillets on foil, top with slices of butter and salt/seasonings of choice.

Wednesday: Quinoa & Cheese, broccoli

Thursday: Roasted Chicken, potatoes/gravy, veggies  (and then make broth from bones afterwards).

Friday: Melissa’s Stir-fry with Rice (I’ll probably use cashews instead of meat)

Saturday: Grilled ground chicken patties from my local grassfed meat farm, on fermented hamburger buns from my favorite local bread company, toppings, Terra Chips, carrot sticks

Sunday: Leftovers for hubby/kids while I go to a baby shower!

    Wednesday: Leftovers from Monday

    Monday – B: Eggs and Toast L: Leftovers D: Chicken pot pie, green beans
    Tuesday – B: Soaked oatmeal & fruit L: Leftovers, fruit, veggie sticks D: BBQ Ribs, corn
    Wednesday – B: Eggs & toast L: tortilla wraps, veggie sticks D: Stuffed Shells, Focaccia Bread (http://www.crunchycreamysweet.com/2013/02/25/one-hour-skillet-focaccia/), green beans
