Stuffed Jalapenos

A few weeks ago I got this picture via text from my parents – loads of produce from their garden. Every year, my dad plants a garden. Every year, either he or my mom pledge to never plant that many tomatoes, beans, zucchini or _______ (fill-in-the-blank) ever again. But, every year in May he repeats the process.

I think he just loves giving it away to others. And one benefit is that I am often one of the receivers!

When you get blessed with LOTS of extra produce, the challenge is trying to figure out what to do with it all.

With the peppers, I often dice them and then freeze them in small bags. OR, I use them to make Sausage & Quinoa Stuffed Peppers.

Tomatoes are great for making Canned Salsa (with the garlic and jalapenos) or Homemade Tomato Soup.

Another favorite for the jalapenos are a recipe from my Grandma. She was a fabulous cook and I hope to share more of her recipes with some Real Food twists to them. Now, this recipe has LOTS of cheese and fat. I’m not scared of fat – our bodies actually really need it. Just be sure it’s coming from good sources and it’s not any of that low-fat junk. Seriously, that’s stuff IS junk.

These are delicious and super easy to make. And you can make a ton at once and freeze them for later:



Jalapenos – LOTS of them

1 lb Italian Sausage

8oz Cream Cheese

3/4 Parmesan Cheese



1. Cut jalapenos in half, scoop out seeds and membranes. (Wear gloves for this part, please).

2. Cook sausage in pan until cooked through. Stir in cream cheese and parmesan cheese.

3. Fill halved jalapenos with mixture. Since this makes a lot, you will need to freeze some (unless you are throwing a big party the same day). Place on sturdy plates and place in gallon size freezer bags to be stacked in the freezer to enjoy all year.  When ready to bake, heat oven to 350 degrees and place on cookie sheet or pizza stone lined with foil and bake for at least 20-25 min.

    OOooo my husband would love this!  We’re vegetarian though so I think I would sub your sausage for maybe mushrooms or maybe the veggie protein sausage.  Thanks for linking to snacktime saturday 🙂

      @Young Nesters Mmm, mushrooms sound good! What led you to be a vegetarian (only curious, not trying to pick a fight, promise!). And I am also curious what veggie protein sausage is made of?
