Summer Veggie Salad

I love summer veggies! There are so many colors, textures, crunches and bursts of flavor.

I whipped this up tonight. I often get the “munchies” in the evening and this was a perfect, guilt-free snack. Lots of crunch and lots of taste. And it’s pretty forgiving and versatile, so experiment with your favorites!

I just used what I had on-hand, but get creative. If you come up with a different combo, please share in the comments below!


Summer Veggie Salad

Cucumber, diced

Red/Yellow/Orange Bell Pepper, diced

Tomatoes, cut in small pieces

Red onion, diced

Fresh Basil, chopped

Black olives, sliced   *optional



1/4 cup olive oil

1/8 cup balsamic vinegar

2-3 cloves of garlic, minced

1/4 tsp salt

1/8 tsp pepper

1 tsp sucanat (or honey or cane sugar)

1/4 tsp dried oregano


1. Dice up desired amount of veggies/olives/basil. Place in bowl.

2. Mix dressing ingredients together.

3. Pour desired amount of dressing over salad (if you will be saving some of the veggies for later, only put dressing on the portion hat will be eaten immediately – otherwise it will get soggy).

4. Stores well in fridge for a day or two ONLY if dressing hasn’t already been mixed in.
